Braised/stew chicken minced meat, potato, carrot, cauliflower, mushroom

Seasoning
600 - 700 ml water
2 tbsp oyster sauce
2 tsp light soya sauce
2 tsp dark soya sauce
Dash of sugar
2 large potatoes (500g), 1.5cm cubes
1 medium carrot
100g cauliflower (to increase next time if less potato)
5 dried mushroom
250g minced meat or 500g chicken (1/2 chicken)
2-3 cloves garlic, minced
1.5 tbsp onion, minced
3tbsp olive oil
Minced meat marinade
1 1/4 tbsp light soya sauce
1 tbsp cornstarch
Dash of pepper
(the above based on my own judgement, to research others)
-Heat wok in smallest fire.
-Add olive oil.
-When oil sizzles, it's hot. Add onion and sauté for 1min n then add garlic and sauté till fragrant and light brown, abt 1min
-Add meat to stir fry till no longer pink
-Add potato, carrots and cauliflower and stir fry till well coated with oil and slightly soft. Stir fry for abt 3-5 min.
-Add mushrooms and stir fry
-Add sauce seasoning mixture. Ensure water covers the ingredients fully.
-bring to a boil and then simmer (means lid open) on low heat and stir every 5 min to ensure even coating of gravy
- simmer till potatoes and carrots are soft
